What is the minimum number of co-parceners required to form a HUF?

There should be minimum 2 co-parcener's in a family for that entity to be treated as a HUF.

We were told that Husband and wife can also form HUF and that wife is not coparcener of her husband's HUF in that case isn't such an HUF with only one coparcener?

On the death of your father, his HUF can continue and the oldest child shall be the karta after his death. The law doesn't have anything specific about the Karta's is mental health.
